We have Mondays off here at Maple, so last month my family and I decided that I would cook dinner every Monday. My mother-in-law has never been outside of Japan, so I decided I would try to take her on a culinary world tour. So far, I have cooked an Italian wild mushroom risotto, Chili and baked potatoes from the American Southwest, a Cajun gumbo from Louisiana, and Jamaican jerk chicken with Caribbean coconut rice and fried bananas. You all probably know risotto already, but have you heard of the others? Chili is a spicy meat stew with tomatoes and beans. Gumbo is kind of like curry, but it’s made with different spices, like paprika and bay leaves. It also has celery, onions, green peppers, sausage and seafood in it. Jamaican jerk is a really spicy and sweet marinade that has rum, molasses, chili peppers, nutmeg, allspice, and cinnamon in it. I really like cooking, and it’s fun to try and choose recipes that my family hasn’t had before. On the other hand, I’m starting to run out of ideas, and it’s hard to find spices for so many different cuisines. Can you think of any international dishes that I should cook?
